Oxtail

Beef Oxtail is cut into cross sections. Each section has a tailbone with some marrow in the center, and a bony portion of meat surrounding the tail.  Due to the high content of fat, gelatin, and marrow, this cut produces an incredibly rich stock or stew and the meat, when braised has a better texture than most beef cuts.  Perfect for long slow cooking.
